Chicken Chilli Tacos by Zarnak Sidhwa

Ingredients for Chicken Chili Tacos:

  • Chicken breast 1
  • Onion chopped 1
  • Bell pepper 1
  • Butter 2 tbsp
  • Cayenne powder 21/4 tsp
  • Salt 1 tsp
  • Sugar 1 tsp
  • Black pepper ½ tsp
  • Red chili powder 2 tbsp
  • Dried oregano ½ tsp
  • Cumin powder ½ tsp
  • Tomato paste 1 can
  • Tomato ketchup ½ cup
  • Tortilla bread half cooked
  • Cabbage, Jalapenos for sprinkle

Method:

  1. Heat 2 tbsp oil or butter, saute chopped onion and chopped bell pepper and set aside.
  2. Add chicken in a large saucepan and cook for 3-5 minutes or until golden brown without adding oil.
  3. Add sauted onion, bell pepper, tomato paste, tomato ketchup.
  4. Season with salt, sugar, black pepper, red chili powder, then add dried oregano, cumin powder and cayenne powder.
  5. Let it cook on low heat and simmer for 20-25 minutes.
  6. Take half-cooked tortilla bread, place on the taco shells and bake for 1-1.5 minutes or until crisp.
  7. Pour some chili chicken on it after removing from the oven.
  8. Sprinkle chopped cabbage and jalapenos and serve with dollop of sour cream.
