Maharaja Biryani by Chef Gulzar

Ingredients:

For Chicken:

  • Chicken drum sticks 700 gm
  • Saffron 1 pinch
  • Yogurt 1 cup
  • Kewra essence few drops
  • Cumin powder 1 tsp
  • Garlic paste 1 tbsp
  • Red chili powder 1 tbsp
  • Lemon juice 2 tbsp
  • Oil as required
  • Salt to taste

For Korma:

  • Onion 2
  • Yogurt 250 gm
  • Green chilies 5-6
  • Whole spice 1/2 cup
  • Almond 20 gm
  • Pistachio 20 gm
  • Dry apricot 100 gm
  • Plum 100 gm
  • Coriander powder 1 tsp
  • Black pepper 1 tsp
  • Red chili powder 1 tsp
  • All spice powder 1 tsp
  • Ginger garlic paste 1 tbsp
  • Turmeric powder 1/2 tsp
  • Oil 1-2 tbsp
  • Salt to taste

For Rice:

  • Sela rice 1/2 kg
  • Bay leaves 2-3
  • Black cumin 1/2 tsp
  • Salt to taste

Method:

  1. Mix garlic paste, red chili powder, cumin powder, lemon juice, kewra essence, saffron and salt in mixing bowl and marinate chicken drum sticks.
  2. Now heat oil in pan and fry marinated chicken.
  3. Then add beaten yogurt and simmer it on low flame.
  4. When yogurt is absorbed, remove it and keep it aside.
  5. For korma: Heat oil in pan, put whole spice and roast it.
  6. Now fry onion and ginger garlic paste.
  7. Then put chicken mixture, mix it, put in pan and roast it.
  8. Then put water as required and cook until it leaves oil.
  9. Now add almond, pistachio, dry apricot and plum, mix it, remove it and keep it aside.
  10. For rice: Soak rice for 2 hours.
  11. Now put bay leaves, black cumin, salt and water as required in pot and cook until fragrance comes.
  12. Then add rice, boil it 1/4 and strain it.
  13. For making layer: Spread layer of korma in pot and put half rice on top.
  14. Now keep drum sticks and put green chilies.
  15. After that, spread rice, then remaining korma, then rice and keep on simmer.
  16. In end, when simmer is completed, take out in dish and serve.
