Fried Prawns With Spicy Sauce by Zarnak Sidhwa

Ingredients:

  • Prawns 1/2 kg
  • Eggs 2
  • Water 2 tbsp
  • Panko bread crumbs 1 cup
  • Flour 1 cup
  • Salt to taste
  • Pepper to taste
  • Oil for frying

Sauce:

  • Chicken stock 3/4 cup
  • Oyster sauce 2 tbsp
  • Chili paste 2 tbsp
  • Corn flour 1-1/2 tsp

Method:

  1. Butterfly the prawns by cutting vertically down the back of the prawn.
  2. Leave tail on.
  3. Season with salt and pepper.
  4. Heat enough oil to deep fry them.
  5. Put bread crumbs in a dish.
  6. Add seasoning to taste and mix well.
  7. Put flour in a separate shallow dish.
  8. Beat the eggs and water together.
  9. Dip the prawns in the egg-water mixture.
  10. Add the prawns to the flour.
  11. Toss to coat.
  12. Dip again in egg-water mixture.
  13. Toss in bread crumbs.
  14. Fry in hot oil until golden.
