Mexican Rice Pudding by Zarnak Sidhwa

Ingredients:

  • Rice 1 cup
  • Unsalted butter 2 tbsp
  • Water 2 cups
  • Milk 2 cups
  • Flour 1 tbsp
  • Caster sugar 1/3 cup
  • Egg 1
  • Vanilla essence 1-1/2 tsp
  • Milk 1 cup
  • Cream 2/3 cup
  • Raisins 1/2 cup
  • Ground cinnamon 1/2 tsp

Method:

  1. Bring rice, butter and water to boil in large saucepan.
  2. Cover and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.
  3. Whisk together milk, flour, sugar, egg, and vanilla essence i bowl and pour milk mixture over cooked rice.
  4. Stir to combine and simmer over low heat for 15 minutes.
  5. Stir in 1 cup milk, cream, raisins, and cinnamon until thoroughly mixed, and allow to cool for few minutes.
  6. Serve warm or cold.
