Vegetable Kofta by Zubaida Tariq

Ingredients:

  • Boiled potatoes 4
  • Peas 1 cup
  • Chicken 1/2 kg
  • Grated carrot 1
  • Chopped green chilies 4
  • Roasted cumin powder 1 tsp
  • Crushed black pepper 1 tsp
  • Red chili flakes 1 tsp
  • Rice flour 1/2 cup
  • Mint leaves 1/2 bunch
  • Green coriander 1/2 bunch
  • Salt to taste
  • Egg whites 2

For Garvy:

  • Chopped onions 3
  • Chopped soya 2 bunches
  • Turmeric 1 tsp
  • Ginger garlic 1 tbsp
  • Red chili 1 tbsp
  • Salt to taste
  • All spice powder 1 tsp
  • Butter 1 tbsp
  • Oil 1 cup
  • Green chilies 4

Method:

  1. Boil chicken with black pepper and 4 garlic cloves.
  2. Stir fry peas and grated carrot in oil and mash it.
  3. Then grind chicken in chopper. Now peel boiled potatoes and mash with fork.
  4. Then put mashed potatoes, carrot, peas, chopped green chilies, mint leaves, coriander leaves and chicken in one bowl and mix it nicely.
  5. Now mix cumin powder, red chili flakes, black pepper and green chilies nicely.
  6. Then grease your hands and make small small koftay.
  7. Then dip koftay in egg whites and shallow fry in hot oil.
  8. Heat oil in pot, do chopped onion golden brown and spread on tissue.
  9. When it becomes crisp, crush with hands.
  10. Then put ginger garlic, onion, red chili, turmeric, all spice powder and chopped soya, roast it lightly and spread fried koftay.
  11. Then add 1 cup hot water, green chilies and salt and keep on simmer.
  12. Put butter after 2 minutes and keep on simmer.
  13. Vegetable kofta is ready.
