Cheesecake by Zarnak Sidhwa

Ingredients:

For Base:

  • Biscuits crumb 1 packet
  • Butter 1/2 cup

For Filling:

  • Cream cheese 2 cups
  • Caster sugar 2 tbsp
  • Cream 2 cups
  • Vanilla essence 1/2 tsp
  • Gelatin 1 tbsp
  • Milk 1/4 cup
  • Chocolate chips 1/2 cup

Method:

  1. Melt butter, mix with biscuit crumbs.
  2. Press in base of 9 inch springform tin and freeze till set.
  3. Meanwhile make filling. Put gelatin in milk in pan and let get foamy.
  4. Heat very gently. Do not boil. Set aside.
  5. Beat cream cheese and add i caster sugar gradually, fold in cream and add essence, cooled gelatin and milk mixture.
  6. Pour over base, level out, sprinkle chocolate chips and freeze.
  7. Remove from freezer after few hours and keep in refrigerator.
  8. Slice and serve.
