Papri Chaat by Zarnak Sidhwa

Ingredients:

For Puri:

  • Wheat flour 1-1/2 cup
  • Flour 3 cups
  • Oil 1/4 cup
  • Red chili powder 1 tsp
  • Turmeric powder 1/2 tsp
  • Cumin seeds 1 tsp
  • Carom seeds 1 tsp
  • Oil 2 tbsp
  • Salt 1 tsp

For Green Chutney:

  • Coriander leaves 1/2 bunch
  • Grated coconut 1/2 cup
  • Lemon juice 2-3 drops
  • Green chilies 3
  • Salt 1/2 tsp

For Red Chutney:

  • Dates 4-5
  • Tamarind 1 tbsp
  • Red chili powder 1/4 tsp
  • Salt 1 tsp

For Yogurt Mix:

  • Yogurt 4 cups
  • Sugar 4 tbsp
  • Curry leaves 2-3
  • Mustard seeds 1/4 tsp
  • Cumin seeds 1/4 tsp
  • Oil 2 tsp
  • Salt 1 tsp

Other Ingredients:

  • Potatoes (boiled and mashed) 2

Method:

  1. For puri: Crush cumin and carom seeds coarsely in mixer.
  2. Mix flour, wheat flour, red chili powder, turmeric, salt, oil, crushed cumin and carom seeds together.
  3. Knead a little hard dough adding water.
  4. Roll out very small even sized round puri of dough.
  5. Deep fry them in oil and keep aside.
  6. For green chutney: Mix grated coconut, coriander leaves, salt, lemon juice, green chilies in a blender to make a fine paste. Keep aside.
  7. For red chutney: Make  red chutney by boiling dates and tamarind together in water till they are cooked.
  8. Then blend to make a fine paste. Add salt and red chili powder to it. Keep aside.
  9. For yogurt mix: Beat yogurt nicely and add to it sugar and salt.
  10. Then heat oil and season it with mustard seeds, cumin seeds, curry leaves and then pour it hot in the yogurt.
  11. Mix it thoroughly and keep aside.
  12. To assemble papri chaat: Add salt and little chat masala to the boiled and coarsely mashed potatoes.
  13. Just before serving, for individual servings put 1 tbsp of the potatoes on the puri.
  14. Then put 1 tbsp yogurt mix over it.
  15. Add 1 tsp of green and red chutney over it.
  16. Sprinkle little red chili powder, chaat masala and serve.
