Eggless Pound Cake by Zarnak Sidhwa

Ingredients:

  • Flour 2-1/2 cups
  • Corn flour 4 tbsp
  • Sugar 3/4 cup
  • Vanilla essence 1 tsp
  • Softened butter 100 gm
  • Condensed milk 1/2 cup
  • Yogurt 1/2 cup
  • Milk 1/3 cup
  • Baking powder 2 tsp
  • Baking soda 1/2 tsp
  • Salt 1 pinch
  • Vanilla bean 1/4 (optional)

Method:

  1. Beat butter and sugar nicely.
  2. Now mix vanilla essence, condensed milk and yogurt.
  3. If using vanilla bean, also add it.
  4. Strain corn flour, flour, baking powder, baking soda and salt.
  5. Now mix all dry ingredients in butter mixture slowly slowly and add little little milk.
  6. Put dry ingredients at start and end of mixing.
  7. This mixture will be some hard, do not over beat.
  8. Put mixture in greased pan and bake on 160 degrees for 40-15 minutes.
  9. Then take out from oven and cool for 10 minutes.
  10. Cut cake and serve hot with chocolate or caramel sauce.
