Beans & Brown Rice Stew by Chef Gulzar

Ingredients:

  • White kidney beans 500 gm
  • Boiled brown rice 250 gm
  • Ginger garlic paste 1 tbsp
  • Chopped onion 1
  • Chopped carrots 2
  • Chopped tomatoes 2
  • Red chili powder 1 tsp
  • Black pepper 1/2 tsp
  • Lemon juice 2 tbsp
  • Cumin powder 1/2 tsp
  • Oil as required
  • Salt to taste

Method:

  1. Soak white kidney beans overnight.
  2. Then strain it and boil beans with red chili powder and salt.
  3. Heat oil in pan and fry ginger garlic paste and onion.
  4. Then add tomatoes, carrots and salt and cook it.
  5. Now put beans and remaining water, mix it and cook it.
  6. Then add black pepper and cumin powder and mix it.
  7. Now add boiled brown rice, mix it and cook until mixture is nicely mixed.
  8. In end, add lemon juice and mix it.
  9. Dish out it, garnish with green coriander and serve.
