Marmalade Cupcakes by Zarnak Sidhwa

Ingredients:

  • Unsalted butter 5 oz
  • Caster sugar 3 oz
  • Orange marmalade 3 oz
  • Eggs 2
  • Flour 6 oz
  • Baking powder 1-1/2 tsp
  • Vanilla essence 1 tsp
  • Orange peel to decorate

Method:

  1. Beat butter and sugar, add eggs, marmalade, flour and baking powder, vanilla essence, mix well and put in paper case lined cupcake tin.
  2. Put thin strips of orange peel on each cupcake.
  3. Bake at 180 degrees C for 20 minutes or until risen and firm to touch.
  4. Cool on a wire rack and serve.
