Lemon Barley Water By Zarnak Sidhwa

Ingredients:
  1. Pearl Barley 1/3 cup
  2. Grated Rind and Juice 2 lemons
  3. Caster Sugar 1/2 cup

Method
  • Place barley in a sleve. Rinse under running water until water runs clear then place in a saucepan with lemon  rind and 6 cups of water.
  • Bring to the boil over medium heat. Simmer for 10 mins then strain mixuter into heatproof bowl, discarding barley. Add sugar to bowl.
  • Stir to dissolve then stir in lemon juice. Pour into bottles and regrigerate until chilled.
