Delhi Ka Tawa Mutton by Shireen Anwer

Ingredients:

  • Mutton 1/2 kg (small pieces)
  • Water 2 cups
  • Bay leaf 1
  • Black cardamom 2
  • Green cardamom 2
  • Cinnamon 1 stick
  • Onion chopped 1/2 cup
  • Ginger garlic 1 tbsp
  • Coriander powder 1 tbsp
  • Cumin powder 1 tsp
  • All spice 1/2 tsp
  • Salt 1 tsp
  • Red chili powder 1 tsp
  • Turmeric 1/4 tsp
  • Oil 1/4 cup

More Ingredients:

  • Yogurt 1/2 cup
  • Oil 1/4 cup

For Tawa:

  • Onion chopped 1/2 cup
  • Tomatoes slices 2
  • Ginger garlic 1 tsp
  • Green chili garlic sauce 1 tbsp
  • Green chili chopped 2
  • Red chili powder 1/2 tsp
  • All spice 1/2 tsp
  • Lemon juice 1 tbsp
  • Cumin roasted and crushed 1 tsp
  • Coriander leaves 3 tbsp
  • Oil 1/4 cup

Method:

  1. Cook mutton with water, bay leave, black cardamom, green cardamom, cinnamon, onion, ginger garlic, coriander powder, cumin powder, all spice, salt, red chili powder, turmeric and oil until meat tender and oil separates.
  2. Then add yogurt, fry it nicely and keep it aside.
  3. Now heat oil on tawa, put onion and saute it until brown.
  4. Then add ginger garlic, green chili garlic sauce and tomatoes and fry it nicely.
  5. Now put red chili powder, all spice, cumin and green chilies with cooked meat and fry for 10 minutes.
  6. Then add all spice, lemon juice and coriander leaves.
  7. Now serve it with naan or parathay.
