Prawn Rissois by Zarnak

Ingredients:

For Pastry:

  • Flour 240 gm
  • Water 2 cups
  • Salt 1/2 tsp
  • Butter 1 tbsp

For Filling:

  • Prawns 1 cup
  • Oil 2 tbsp
  • Chopped onions 1-1/2 cup
  • Salt and Pepper to taste
  • Corn flour 1 tbsp
  • Grated cheese 1 tbsp
  • Oil for deep fry
  • Egg lightly beaten 1
  • Bread crumbs for coating

Method:

  1. Sieve flour.
  2. Place water in pan with salt and bring to boil.
  3. Add butter, lower heat and add flour.
  4. Stir and beat to mix will it forms ball.
  5. Remove form heat and allow to cool enough to handle.
  6. Knead well.
  7. Chop prawns finely.
  8. Heat 2 tbsp oil and fry onions till transparent.
  9. Add prawns and cook until light pink.
  10. Stir in water, salt and pepper and cook for 2 minutes.
  11. Mix corn flour with little water and stir into mixture.
  12. Cook till thick and creamy.
  13. Remove from heat and add cheese.
  14. Mix well and allow to cool.
  15. Roll out pastry about 1/8 inch thick.
  16. Cut around about 2 inches in diameter.
  17. Place 1 tbsp filling on each round, fold over and moisten with water to seal.
  18. Heat oil in deep frying pan.
  19. Dip rissois in beaten egg, roll in bread crumbs and deep fry.
  20. Drain on paper towel and serve hot.
