Ingredients:

  • Cauliflower 1 cup
  • Capsicum 2
  • Potato 2
  • French beans 1 cup
  • Carrot 2
  • Blended tomatoes 2
  • Fried onion 1/2 cup
  • Whole red chilies 4
  • Orange color 1/4 tsp
  • Oil 1/4 cup

For Masala:

  • Medium onion 1
  • Garlic 1 tbsp
  • Coconut 1 tbsp
  • Coriander 1 tbsp
  • Sesame 1 tsp
  • Poppy 1 tbsp
  • Cumin 1 tbsp
  • Mustard 1/4 tsp
  • Fenugreek seeds 2-3
  • Cloves 4
  • Cinnamon 1
  • Cardamom 2
  • Coriander leaves 1 cup
  • Dried red chilies 4

Method:

  1. Cut cauliflower, capsicum, potato and carrot in big piece and fry with beans nicely.
  2. Now grind all masala ingredients.
  3. Then heat oil, put masala, blended tomatoes and orange color and fry it nicely.
  4. Now add fried vegetables and simmer it until it tender.
  5. Serve with pori.

Vegetable Kolhapuri is Kolhapur, India dish. It is spicy gravy dish prepared with vegetables and served with pori.
