Shalgam Ka Achar

Ingredients:

  • White turnip 1 kg
  • Garlic 1 clove
  • Mustard oil 2 cups
  • White vinegar 1/2 cup
  • Raisins 1/2 cup
  • Green chilies 10
  • Onion seeds 1 tsp
  • White cumin 1 tbsp
  • Crushed red chili 2 tbsp
  • Mustard powder 2 tbsp
  • Jaggery 2 tbsp
  • Salt to taste
  • Fenugreek seeds 7-8

Method:

  1. Heat water in pot and put turnip.
  2. Also put jaggery and vinegar.
  3. When turnip tender, drain water, dry it nicely and mix marked green chilies, red chili, mustard, soaked raisins, onion seeds, cumin, garlic and salt.
  4. Now heat mustard oil in pot, put fenugreek seeds and close stove after few minutes.
  5. When oil is little cool, put turnip, roast for 5 minutes on low flame and remove it.
  6. When it cools, put in jar.
  7. It is ready.

Shalgam Ka Achar is spicy achar. It is different variety. Try this achar and it is served with roti.
