Fish With Coriander Butter

Ingredients:

  • Fish fillets 4
  • Coriander leaves 1 bunch
  • Butter 3 tbsp
  • Black peppercorns to taste
  • Salt to taste
  • Lemons 3
  • Sea salt to taste
  • Red chili flakes 1 tsp
  • Olive oil 1 tbsp
  • Lettuce leaves 4-5

Method:

  1. To make coriander butter: Finely chop coriander leaves, add black peppercorns and salt and mix it nicely.
  2. Grate rind of 1 lemon and add to same bowl.
  3. Squeeze juice of lemon and add it.
  4. Add butter and mix well.
  5. Place 2 cling or foil pieces one over the other.
  6. Place prepared coriander mixture in center, spread it evenly, roll tightly to make cylinder and seal it edges.
  7. Refrigerate till set.
  8. Place fish pieces in bowl, add sea salt, crushed peppercorns, red chili flakes and olive oil and rub well.
  9. Place fish on grill pan and cook till grill marks appear on both sides.
  10. Make bed of iceberg lettuce and salad leaves on serving platter.
  11. Cut coriander butter into roundels and discard foil paper.
  12. Place grilled fish on bed of lettuce and arugula leaves, top with coriander butter roundels and serve immediately.

Fish With Coriander Butter is delicious & unique dish. Fish is grilled and served on iceberg lettuce with coriander butter.
