Mexican Chicken

Ingredients:

  • Boneless chicken – 1 kg
  • Salt – to taste
  • Garlic paste - 1 tbsp
  • Pepper – 1 tbsp
  • Vinegar – 4 tbsp
  • Tomato paste – 2 cups
  • Capsicum – 2
  • Tomato ketchup – 2 cups
  • Red chilies – 8
  • Oil – 4 tbsp

Method:

  1. In a bowl, marinate chicken with garlic, salt, vinegar and pepper.
  2. Take a pot and heat oil for 2 minutes.
  3. Stir fry chicken and add tomato paste and ketchup.
  4. Add capsicum and red chilies, and cook for 10 minutes on a low heat.
  5. Serve hot.
