Shawarma Recipe

Ingredients:

  • Chicken boneless 1/2 kg
  • Garlic cloves 3-4 cloves
  • Yogurt 1/2 cup
  • Vinegar 2 tbsp
  • BBQ masala 2 tbsp
  • Lemon juice 1 tbsp
  • Crushed black pepper 1 tsp
  • Oil as required
  • Salt to taste

For Pita Bread:

  • Whole wheat flour 1/2 kg
  • Yeast 1-1/2 tbsp
  • Egg 1
  • Sugar 1 tsp
  • Salt 1-1/2 tsp
  • Corn flour 1 cup
  • Warm water 3 cups
  • Choker (Bran) 1 cup

For Hummus Sauce:

  • Boiled chickpeas 750 gm
  • Tahini 10 tbsp
  • Garlic 4-6 cloves
  • Lemon juice 6 tbsp
  • Toasted cumin seeds 1 tsp
  • Olive oil 1 cup
  • Pine nuts 4 tbsp
  • Red chili powder 1 tsp
  • Walnuts 1/2 cup
  • Black olives 1/2 cup
  • Green olives 1/2 cup
  • Yogurt 1/2 cup
  • Tomato paste 4 tbsp
  • Salt to taste

For Filling:

  • Pickled cucumber 1/2 cup
  • Pickled chili 1/2 cup
  • Cucumber 1
  • Onion 1
  • Tomato 1
  • Lettuce leaves 3-4
  • Beetroot 1
  • Olives slices 1 cup

Method:

  1. For chicken: Cut chicken into finely slices.
  2. Then marinate chicken with yogurt, vinegar, bbq masala, lemon juice and black pepper for 1 hour.
  3. Then heat oil in pan, put chicken and garlic and fry it.
  4. For pita bread: Combine sugar and yeast with 1 cup water and leave in warm place for rise.
  5. Mix egg, corn flour, whole wheat flour and yeast.
  6. Knead to smooth dough with warm water.
  7. Roll out small portions, sprinkle with water and then with choker.
  8. Cook in pan on medium flame for 8-10 minutes on each side.
  9. For hummus: Boil chickpeas until tender.
  10. Fry garlic cloves till lightly golden.
  11. Put chickpeas, tahini, fried garlic, olive oil, salt and lemon juice in blender and blend until thick paste.
  12. Add little water if mixture is too thick to blend easily.
  13. Blend in toasted cumin seeds, pine nuts, red chili powder, walnuts, black olives, green olives, yogurt and tomato paste.
  14. Then take out in bowl and drizzle olive oil on top.
  15. For filling: Foment pita bread slightly in pan.
  16. Then spread hummus sauce, keep chicken, olives, pickled cucumber, pickled chili, cucumber, tomato, onion, beetroot, lettuce leaves and olives.
  17. Then roll it and serve.

Shawarma Recipe is an Arabic dish. It is popular street food in Pakistan. It is prepared with chicken, stuffed in pita bread with sauce, vegetables and olives. Then grilled and serve with sauce or dip. You can make it with beef also and you can use bun also. It can also be served as platter.
