Carrot Casserole

Ingredients:

  • 1 ½ pounds carrots
  • 1 cup mayonnaise
  • 1 tablespoon grated onion
  • 1 tablespoon horseradish
  • 1/4 cup cheddar cheese, shredded
  • 2 tablespoons buttered bread crumbs

Method:

  1. In a saucepan; put 1 in. of water and add carrots. Bring it to a boil then reduce heat; cover and simmer for 7-9 minutes.
  2. Drain the carrots, reserving 1/4 cup cooking liquid.
  3. Then transfer carrots in a baking dish.
  4. In a bowl, mix together the mayonnaise, onion, horseradish and reserved cooking liquid; then spread evenly over carrots.
  5. Sprinkle with cheese; top with bread crumbs.
  6. Bake, uncovered, at 350° for 30 minutes.
  7. Serve hot.
