Onion Bisque

Ingredients:

  • 2 cups chopped onion
  • 1 clove garlic, minced
  • 1/2 cup chopped carrot
  • 1/4 cup butter
  • 1/2 cup half-and-half
  • Salt and pepper
  • Chopped parsley
  • 2 cups diced potatoes
  • 2 cans Swanson chicken broth

Method:

  1. In a pot sauté onion, garlic and carrot with butter.
  2. Add broth and potatoes. Simmer until potatoes are tender.
  3. Reduce it to pulp in a blender and then return it to heat.
  4. Then, take it off from heat and stir in cream.
  5. Add salt, pepper and garnish with parsley.

Great looking bisque with garlic flavor
