Aromatic Lamb With Sweet Potato And Fruity Mutton Curry by Chef Mehboob

Ingredients for Aromatic Lamb With Sweet Potato:

  • Oil 2 tbsp
  • Mutton Boneless 1 kg
  • Onion 2
  • Sweet Potato 1/2 kg
  • Coriander Powder 1 tbsp
  • Cinnamon Powder 1 tsp
  • Tomato Puree 1/2 cup
  • Salt to taste
  • Black Pepper 1 tsp
  • Ginger Garlic Paste 1-1/2 tbsp
  • Coriander 2 tbsp

Method:

  1. Heat oil in one big pan and fry onion & ginger garlic paste.
  2. Now add mutton cubes and fry on high flame until light brown.
  3. Together add sweet potato & all masala ingredients and mix it. Then add 2-1/2 cup water & tomato puree and boil it.
  4. Lastly, cover the pan and cook for 15 minutes on medium flame until mutton & sweet potato becomes soft.
  5. Take out in serving dish.
  6. Decorate with coriander and serve with hot rice.

Ingredients for Fruity Mutton Curry:

  • Mutton Boneless 1 kg
  • Onion 2
  • Carrot 2
  • Red Chilli Powder 1 tbsp
  • Ginger Garlic Paste 2 tbsp
  • Tomato 6
  • Chickpeas 1/2 cup
  • Dry Apricot 1 cup
  • Chicken Stock 1 liter
  • Raisul-kunoth 2 tbsp
  • Pomegranate Seed 1/2 cup
  • Salt to taste
  • Coriander 1/2 cup

Method:

  1. Heat oil in one pan and fry onion & ginger garlic paste. When light brown, add mutton and do brown.
  2. Now add tomato & masala ingredients and fry it.
  3. When masala dries, add chicken stock, boil it, cover it and cook for 30 minutes.
  4. Then add carrot & boiled chickpeas and cook more for 10 minutes until mutton cooked well.
  5. Lastly, add dried apricot and cook for 10 minutes on low flame.
  6. Take out in dish. Garnish with mustard seed and coriander leaves and serve it.
