Bean Curd In Sweet Corn Soup, Beef With Vegetables, Kungpao Prawns And Beijing Prawns by Shireen Anwer

Ingredients For Kungpao Prawns:

  • Prawns cleaned 250 gm
  • Salt 1 tsp
  • White pepper 1 tsp
  • Egg white 1
  • Corn flour 3 tbsp
  • Oil 2 tbsp
  • Oil 1/4 cup
  • Chili sauce 1 tbsp
  • Garlic chopped 1 tbsp
  • Soya sauce 2 tbsp
  • Ketchup 4 tbsp
  • Stock 1  cup
  • Onion 1
  • Spring onion 2
  • Red chili whole 12
  • Capsicum 1

Method:

  1. First wash the prawns add salt, white pepper, egg white, corn flour, marinate the chicken and fry it in oil.
  2. Now pour oil add garlic for frying.
  3. Now add chopped onions, green chilies, capsicum, whole red chilies, salt, white chilies, stock and fried prawns.
  4. Then make it thick with corn flour and then serve.

Ingredients For Beef With Vegetables:

  • Undercut 1/2 kg
  • Salt 1 tsp
  • White pepper 1 tsp
  • Soya sauce 1 tbsp
  • Corn flour 2 tbsp
  • Oil  2 tbsp
  • Oil 1/4 cup
  • Chopped garlic 1 cup
  • Cabbage 1 cup
  • Cauliflower 1 cup
  • Flowerets 1
  • Carrot 1
  • Capsicum 1
  • Onion 1
  • Oyster sauce 2 tbsp
  • Stock 1-1/2 cup

Method:

  1. Marinate the chicken with salt, white pepper, soya sauce, corn flour and oil.
  2. Now heat the oil in a pan, add garlic cloves for frying.
  3. Then add chopped cabbage, boiled cauliflower, carrots, capsicum, chopped onion, fried undercut, salt, white pepper, soya sauce, corn flour and oyster sauce then mix it.
  4. Now add chicken stock, When it is boiled well then add corn flour for making its paste thick then serve.

Ingredients For Bean Curd in Sweet Corn Soup:

  • Chicken stock  8 cups
  • Chicken breast 1
  • Salt  1/2 tsp
  • White pepper  1/2 tsp
  • Egg white  1
  • Corn flour  1 tbsp
  • Bean curd  3
  • Carrot  1
  • Spring onion leaves  2 tbsp
  • Mushrooms  3
  • Sweet corn  1 cup
  • Soya sauce  2 tbsp
  • Egg  1 beaten
  • Corn flour  1/2 cup

Method:

  1. Marinate the chicken wit salt, white pepper, egg white and corn flour.
  2. Now pour chicken stock add the marinated chicken, add chopped carrots, green onion, curry leaves, mushrooms, bean sprout, sweet corn, salt, white chilies, soya sauce, stir it well.
  3. Then make the paste with corn flour.
  4. In the end add beaten egg, stir it well and then serve.

Ingredients For Beijing Rice:

  • Boiled rice 250 gm
  • Cabbage 1 cup
  • Spring onion 2
  • Onion  1
  • Carrot 1
  • Capsicum 1
  • Tomato 1
  • Oil 1/4 cup
  • Eggs 2 beaten
  • Garlic crushed 1 tbsp
  • Salt   tsp
  • White pepper 1/2 tsp
  • Soya sauce 2 tbsp

Method:

  1. Pour oil in a pan, add chopped garlic for frying.
  2. Now add beaten eggs, cabbage, green onion, chopped green onion, chopped carrots, capsicum, tomatoes, salt, white chilies, soya sauce, boiled rice mix it well, take them out and then serve.
