Ingredients for Nargisi Vegetable Koftay:

  • Carrot 1
  • Egg white 1
  • Potatoes 2
  • Green chilies 2
  • Boiled eggs 4
  • Mint leaves 7-8
  • Peas 1/2 cup
  • Rice flour 1/2 cup
  • Red chili 1 tsp
  • White cumin 1 tsp
  • All spice powder 1/2 tsp
  • Salt to taste

For Gravy:

  • Chopped onion 3
  • Oil 1/2 cup
  • Turmeric 1 tsp
  • Ginger garlic paste 1 tbsp
  • All spice powder 1/2 tsp
  • Red chili 1/2 tbsp
  • Coriander powder 1/2 tbsp
  • Yogurt 3 tbsp
  • Salt to taste

Method:

  1. First, boil potatoes, peel it and make bhurta.
  2. Grind carrot and peas finely and mix in potato bhurta.
  3. Together mix salt, red chili, white cumin, all spice powder, rice flour and egg white nicely and make small small koftay.
  4. For Salan: Heat oil, do finely chopped onion golden brown, take out and spread on paper.
  5. Now put yogurt, ginger garlic paste, red chili, coriander powder, turmeric, all spice powder, salt and mashed fried onion and roast it lightly.
  6. Then fry koftay in low oil in separate pan and put in cooked masalay. Together do its flame low.
  7. When oil comes up, put 1 glass water and cook without cover.
  8. When it boils, cut green chilies and mint leaves into finely chop and put in it.
  9. In end, keep on simmer on low flame and serve with hot roti.
