Haddi Guddi Nihari by Chef Gulzar

Ingredients for Haddi Guddi Nihari:

  • Boneless beef 700 gm
  • Beef bone 250 gm
  • Ginger garlic paste 2 tbsp
  • White flour 1 cup
  • Nihari masala 3 tbsp
  • Big cardamom 2
  • Oil as required
  • Ginger as required
  • Coriander as required
  • Green chilies as required
  • Lemon as required
  • Salt to taste

Method:

  1. Add water as required, nali wali haddi and ginger garlic paste in pot and cook for 3-4 hours.
  2. Now strain it and separate nali and stock and waste haddi.
  3. Then roast flour nicely.
  4. Heat oil in pan and do onion light brown.
  5. Now put ginger garlic paste and boneless beef and roast it nicely.
  6. After that, put color and nihari masala and roast for 1-2 minutes on high flame and stock.
  7. When mutton is tendered well, dissolve flour in water, add slowly slowly and mix it.
  8. When gravy becomes thick, add nali.
  9. Give bhagar of onion, garnish with green chili, green coriander, lemon and ginger and serve.
