Chicken Curry by Zarnak Sidhwa

Ingredients:

  • Boneless chicken 250 gm
  • Red chili 1 tsp
  • Turmeric 1/4 tsp
  • Coriander 1/2 tsp
  • Cumin seeds 1/4 tsp
  • Cinnamon 2 piece
  • Cloves 4
  • Poppy seeds 1/2 tsp
  • Coriander leaves 1/2 bunch
  • Chopped garlic 1/2 tsp
  • Chopped ginger 1/2 tsp
  • Green chilies 2
  • Onion chopped 1/2 cup
  • Tomatoes 1/4 cup
  • Grated coconut 1/2 cup
  • Tamarind 1/4 tsp
  • Oil as needed

Method:

  1. Grind the cinnamon sticks, coriander seeds and cloves together.
  2. Use this to marinate the chicken and season with a much salt as needed.
  3. Heat some oil in a pan and add the coconut, onions, tomatoes and saute.
  4. Add the poppy seeds, ginger, garlic and salt and cook for about 2 minutes.
  5. Fry the marinated chicken in pan, and once it begins to brown add the tomato curry base and a little water.
  6. Keep the ban covered and leave to cook for about 8-10 minutes. Serve hot.
