Spicy Chicken Rice by Zarnak Sidhwa

Ingredients:

  • Rice 1-1/2 cups
  • Chicken 1/2 kg
  • Chicken stock 1 cup
  • Oil 3 tbsp
  • Sliced onion 1 cup
  • Green chilies 1 tbsp
  • Cloves 8-10
  • Cardamom 2
  • Chili powder 1 tsp
  • Turmeric 1/2 tsp
  • Eggs 4
  • Coriander leaves 1 tbsp
  • Salt to taste

Method:

  1. Heat oil.
  2. Add in the sliced onion, let saute.
  3. Add green chilies, cloves, cardamoms, red chili powder, turmeric, salt, let saute, add chicken stock and then the chicken and let cook till done.
  4. When very little water remains and chicken is fully cooked, add the rice.
  5. Let cook on low flame till done.
  6. Fluff up rice with a fork and serve garnished with chopped coriander leaves and wedges of boiled eggs.
