Cold Pasta Salad by Zarnak Sidhwa

Ingredients:

  • Pasta 2 cups
  • Cucumber 1
  • Small onion 1
  • Tomatoes 2
  • Black olives 1/4 cup
  • Salad dressing 1 cup

Method:

  1. Fill a large pot with lightly salted water and bring to a rolling boil over high heat.
  2. Once the water is boiling, stir in the paste and return to a boil.
  3. Cook uncovered, stirring occasionally, until the paste has cooked through, but is still firm to the bite, about 8 minutes.
  4. Drain and cool by running cold water over the pasta in a colander set in the sink.
  5. Combine cooked and cooled paste with the cucumber, onion, tomatoes and olives in a large bowl.
  6. Pour the Italian dressing over the salad and stir to combine.
  7. Cover and refrigerate for at least two hours before serving.
