Strawberry Lemon Curd Trifle by Zarnak Sidhwa

Ingredients:

  • Pound cake 1
  • Strawberry sauce 1-1/2 cups
  • Sliced strawberries 1 cup
  • Lemon curd 1-1/2 cups
  • Cream 1-1/2 cups
  • Caster sugar 2-3 tbsp
  • Vanilla essence 1/2 tsp
  • Crushed macaroons 4

Method:

  1. Beat cream, caster sugar and vanilla essence until stiff peaks form.
  2. To assemble: In the bottom of your trifle bowl place thick sliced of the pound cake.
  3. Pour half of the strawberry sauce over the pound cake.
  4. Top the strawberry sauce with half of the sliced strawberries.
  5. Then pour half of the lemon curd over the strawberries.
  6. Top with the half of the whipped cream.
  7. Repeat the layers.
  8. Cover and refrigerate overnight to allow the flavors to mingle.
  9. Just before serving sprinkle the top of the trifle with the crushed macaroons.
