Zam Zam Pulao by Chef Gulzar

Ingredients:

For Mutton Balls:

  • Mutton mince 500 gm
  • Onion 2
  • Eggs 2
  • Bread slices 2
  • Garlic chopped 1 tbsp
  • Red chili powder 1 tbsp
  • Cumin grinded 1 tsp
  • Black pepper crushed 1 tsp
  • Baking powder 1/2 tsp
  • Oil for deep fry
  • Salt to taste

For Pulao:

  • Mix vegetables 500 gm
  • Sela rice 500 gm
  • Ginger garlic paste 2 tbsp
  • Cinnamon 1-2 sticks
  • Clove 2-3
  • Black cardamom 2-3
  • Onion 1
  • Black pepper crushed 1/2 tsp
  • Mutton stock 1 jug
  • Mint 1 bunch
  • Green chilies 4-5
  • Cottage cheese 1 cup
  • Oil 4-5 tbsp
  • Salt to taste

Method:

  1. For balls: Put all ingredients except oil in chopper, mix it nicely, make balls, steam it and then fry it.
  2. For rice: Wash rice and soak it for 2 hours.
  3. Now heat oil in pan and roast cinnamon, black cardamom and clove.
  4. Then fry onion, add ginger garlic paste and roast it.
  5. Now add mix vegetables, crushed black pepper and salt and mix it.
  6. Then add soaked rice and stock and cook until rice is ready, put balls and keep on simmer.
  7. When simmer is completed, fry cottage cheese lightly and put on top.
  8. Garnish with mint leaves and green chilies and serve.
