Chana Pulao by Zarnak Sidhwa

Ingredients:

  • Basmati rice 1 kg
  • Oil 2 tbsp
  • Chopped ginger 2 tbsp
  • Chopped garlic 2 tbsp
  • Sliced onions 2
  • Chopped tomatoes 1/2 kg
  • Yogurt 200 gm
  • Whole garam masala 1 tbsp
  • Crushed red chili 1 tbsp
  • Chopped coriander 1/2 bunch
  • Chopped green chillies 3-4
  • Boiled chickpeas 100 gm
  • Salt to taste

Method:

  1. Heat oil, add onion, ginger and garlic and saute it.
  2. When it start browning, put tomato, yogurt, coriander, red chilli, salt, and whole garam masala.
  3. Once sauteed, add boiled chickpeas.
  4. Boil rice i separate pan
  5. Strain rice and add it into pan.
  6. When all water is absorbed, put lid on pot & seal it for 15 minutes for simmer.
  7. Meanwhile, chop onion, cucumber, tomato and make kachumbar salad.
  8. Invert rice onto plate and serve with kachumbar salad & mint chutney.
