Kabuli Pulao by Shireen Anwer

Ingredients:

  • Rice (soaked for 30 minutes) 750 gm
  • Mutton 1/2 kg
  • Ginger garlic 1 tbsp
  • Salt 2 tbsp
  • Water 2 cups
  • Oil 1/4 cup
  • Sugar 2 tbsp
  • Raisins 1/2 cup
  • Carrot 1
  • Brown onion 1/2 cup

For Grind Coarsely:

  • Black cardamom 2
  • Black pepper 8
  • Cinnamon 1 inch
  • Cumin 1 tsp

Method:

  1. Mix all grind ingredients and grind it.
  2. Then boil mutton with ginger garlic paste, salt and 2 cup water until water dries.
  3. Now heat 1/4 cup oil, put sugar and caramelize until light golden.
  4. Then put 2-3 cup water with salt.
  5. Then add soaked rice and cook on high flame until it boils and half water dries.
  6. Then mix grinded masala nicely and simmer it.
  7. Heat 2 tbsp in more pan, fry raisins and take it out.
  8. Now put 1 tbsp sugar in this oil, caramelize it, put carrot and keep it aside.
  9. Heat 1/4 cup oil in one more pan, out fried onion and boiled meat and fry until light golden.
  10. Now put fried meat around cooked rice.
  11. Also add fried carrot and raisins and serve hot.
