Tawa Kaleji Gurda Aur Maghaz Masala by Chef Gulzar

Ingredients:

  • Mutton heart 250 gm
  • Mutton liver 250 gm
  • Mutton kidney 250 gm
  • Mutton brain 1
  • Ginger garlic paste 2 tbsp
  • Ginger water 2 tbsp
  • Red chili flakes 2 tbsp
  • Black pepper 1 tbsp
  • Ground coriander seeds 1 tbsp
  • Ground cumin 1 tbsp
  • Fenugreek seeds 1 tsp
  • Crushed anise seeds 1 tsp
  • Onion seeds 1/3 tsp
  • Turmeric powder 1 tsp
  • Fenugreek seeds 1 tsp
  • Coriander leaves 1/2 bunch
  • Green chilies 5-6
  • Yogurt 2 cups
  • Ghee 1/2 cup
  • Salt to taste

Method:

  1. Cut heart, kidney and liver into small small pieces.
  2. Now put ginger water and leave for 10-15 minutes.
  3. Then wash it and keep it aside.
  4. Now put 2 cups water and 1/2 tsp turmeric powder in pot, boil it, put brain and boil for 4-5 minutes.
  5. Then strain it and keep it aside.
  6. Now put liver, heart and kidney pieces on tawa, also add ginger garlic paste and yogurt, cover it and cook it.
  7. When liver, heart and kidney tender, add red chili flakes, black pepper, coriander seeds, cumin, fenugreek seeds, fennel seeds, onion seeds, turmeric, salt, ghee and green chilies and roast it.
  8. When liver, heart and kidney are ready, cut brain into pieces, add it and cook for 2-3 minutes.
  9. Before taking out in dish, put fenugreek seeds and coriander leaves, mix it, take out in dish and serve.
