Afghani Rice by Chef Gulzar

Ingredients:

  • Sela rice 500 gm
  • Beef 500 gm
  • Onion 1
  • Raisins 1/2 cup
  • Cumin seeds 1 tsp
  • Grated carrot 1
  • Black pepper 1 tsp
  • Chopped garlic 2-3 cloves
  • Yogurt 1 cup
  • Crushed cardamom 1/2 tsp
  • Cinnamon 2 sticks
  • Cloves 3-4
  • Sugar 1 tbsp
  • Oil 2-3 tbsp
  • Salt to taste

Method:

  1. Clean rice and soak for 2-3 hours in water.
  2. Heat oil in pan, put cinnamon and cloves and crackle it.
  3. Now add onion, garlic and beef and roast it nicely.
  4. Then add yogurt, black pepper, cinnamon, salt and cumin seeds.
  5. When mixture dries and oil leaves, add 1 to 1-1/2 cup water and cook it.
  6. When meat tender and stock is ready, add rice.
  7. When rice is ready, simmer it.
  8. Now add carrot, raisins, sugar and water in pan and cook for 3-5 minutes.
  9. Then put this mixture on rice and serve.
