Red Pumpkin Patio by Zarnak Sidhwa

Ingredients:

  • Red pumpkin 1/2 kg
  • Garlic 4 cloves
  • Cumin seeds 1 tbsp
  • Dry red chillies 3
  • Onion (halved) 1
  • Onion (sliced) 1
  • Salt 1 tsp
  • Lemon juice 1 tbsp
  • Sugar 1 tsp
  • Coriander (chopped) 2 tbsp
  • Oil 2 tbsp

Method:

  1. Remove seeds and skin of pumpkin and cut into small squares.
  2. Heat oil, fry the sliced onion.
  3. Do not brown.
  4. Grind halved onion, cumin seeds, garlic, and red chillies to fine paste.
  5. Add paste to onion.
  6. A little water can be added.
  7. Add salt and pumpkin. Let boil.
  8. Then simmer till pumpkin is done.
  9. Remove from fire when done and mash well.
  10. Return pan to fire and then add lemon juice and sugar, serve garnished with chopped coriander leaves. Serve with rice.
