Chicken Tikka Pulao by Nimra Iftikar

Ingredients:

  • Chicken 1/2 kg
  • Rice 5 cup
  • Yogurt 3 cup
  • Lemon 2
  • Cardamom 5
  • Onion 7
  • Green chili 5
  • Cumin seeds 1-1/2 tsp
  • Crushed black pepper 1-1/2 tsp
  • Ginger garlic paste 2 tbsp
  • Chicken tikka masala 4 tbsp
  • Red chili powder 1 tbsp
  • Whole spice powder 1 tsp
  • Water 8 cup
  • Oil 1 cup
  • Salt 2 tbsp
  • Coriander leaves 1/2 bunch

Method:

  1. Marinate chicken with yogurt, ginger garlic paste, cardamom and tikka masala for 10 minutes in mixing bowl.
  2. For stock: Add water in pot, cook on high flame, add chicken bones with 2 tsp whole coriander, cumin seeds, onion, whole spice powder and salt in pot and stir it.
  3. For rice: Add oil and onion in separate pot and fry on medium flame until golden brown.
  4. Then add fried onion, yogurt, ginger garlic paste, cardamom and green chilies and saute for 2-3 minutes.
  5. Now add rice and cook on pressure cooker for 4-5 minutes.
  6. Add 4-5 tbsp oil, marinated chicken, lemon juice, red chili powder, black pepper powder and salt and cook until water dries.
  7. When chicken tender, take out in platter, garnish with onion and coriander leaves and serve.
