Chicken Penne Casserole by Shireen Anwer

Ingredients:

  • Chicken breast (thinly sliced) 3
  • Capsicum (thinly cubes) 1
  • Onion chopped 1
  • Mixed herbs 1 tsp
  • Salt 3/4 tsp
  • Red pepper crushed 1 tsp
  • Oil 3-4 tbsp
  • Garlic crushed 1 tsp
  • Penne pasta cooked 2 cups
  • Tomato puree 1 cup
  • Cheddar/Mozzarella cheese 1 cup
  • Chicken powder 1 tbsp
  • Sweet corn 1/2 cup
  • Ketchup 2-3 tbsp

Method:

  1. Heat oil, put onion and garlic and fry until light golden.
  2. Now put chicken sliced and stir fry it.
  3. Then add mixed herbs, salt, red pepper, chicken powder and ketchup with tomato puree.
  4. Then fold capsicum and corn with pasta and toast all nicely.
  5. Now spread half mixture on baking dish.
  6. Spread some cheese.
  7. Then make again layer of pasta with cheese and bake for 10-12 minutes till cheese melts.
