Keema Pulao by Zarnak Sidhwa

Ingredients:

  • Mutton mince 200 grams
  • Rice (soaked for 1/2 hour) 1-1/2 cups
  • Oil 2 tbsp
  • Green cardamoms 2
  • Black cardamom 1
  • Cloves 5-6
  • Cinnamon 1 inch stick
  • Black peppercorns 8-10
  • Cumin seeds 1 tsp
  • Garlic chopped 2 cloves
  • Onion chopped 1 large
  • Green chilies chopped 3
  • Garlic paste 1 tbsp
  • Ginger paste 1 tbsp
  • Red chili powder 1 tsp
  • Tomatoes chopped 2 large
  • Mint leaves 15-20
  • Coriander leaves chopped few
  • Salt to taste
  • All spice powder 1 tsp

Method:

  1. Clean rice, soak in water for 30 minutes, take it out and keep it aside.
  2. Heat oil in pan and saute all spice powder, green cardamom, black cardamom, cloves, cinnamon, black pepper, cumin seeds, onion, garlic cloves and green chilies.
  3. Now put mutton mince in pan, cook on high flame for few minutes, put ginger paste, garlic paste, red chili powder, tomatoes, 3-1/2 cup hot water, salt and soaked rice and mix with lightly hands.
  4. Cook rice on high flame.
  5. Then cover it and cook more for 10-12 minutes on low flame.
  6. Now add mint leaves and coriander leaves.
  7. Serve hot keema pulao with mix vegetable raita.
