Chinioti Biryani by Shireen Anwer

Ingredients:

  • Chicken 1 kg
  • Boiled rice 750 gm
  • Oil 3/4 cup
  • Brown onion 1/2 cup
  • Red chili powder 1 tbsp
  • Yogurt 1 cup
  • Whole green chilies 8
  • Cloves 6
  • Whole green cardamom 6
  • Salt 1-1/2 tsp
  • All spice 1-1/2 tsp
  • Plum 10
  • Water 2-3 cup
  • Kewra 1-1/2 tsp
  • Green cardamom powder 1/2 tsp
  • Nutmeg powder 1/4 tsp
  • Mace powder 1/4 tsp
  • Yellow color few drops

Method:

  1. Boil water with 2 tbsp salt.
  2. Now put rice and cook until it is half done.
  3. Then keep it aside.
  4. For chicken: Heat oil, put brown onion, yogurt, chicken, cloves, whole green cardamom, green chilies, red chili powder and salt.
  5. Now cover meat and cook for 25 minutes.
  6. Also put 2 cup water.
  7. When water dries, fry meat, all plum, cardamom powder, nutmeg powder and mace powder and cook on medium flame until meat tender.
  8. Then put all spice and kewra.
  9. Put chicken mixture in pan, put boiled rice and yellow color and simmer it for 20 minutes.
