Fried Masala Eggplant

Ingredients:
- Eggplants 2
- Oil for fry
- Onion 1 cup
- Ginger garlic paste 1 tbsp
- Tomatoes slice 2
- Yogurt 1/2 cup
- Green chilies 2 tbsp
- Crushed cumin 1/2 tsp
- Mustard seeds 1/2 tsp
- Fennel seeds 1/2 tsp
- Whole coriander 1/2 tsp
- Crushed red chili 1 tsp
- Turmeric powder 1 tsp
- Lemon juice 1 tbsp
- Salt to taste
- Oil 1/4 cup
Method:
- Cut eggplants into slices, put salt, deep fry it and keep it aside.
- Then heat oil in pan, saute onion, put ginger garlic paste and green chilies, fry for few minutes, put tomatoes slices and turmeric and fry more for 2 minutes.
- Now grind, fennel seeds, whole coriander, mustard seeds and crushed cumin together, put all masalay on high flame and roast it.
- Then add fried eggplants, simmer it for 5 minutes, put lemon juice and served.
Fried Masala Eggplant is tasty dish. Eggplant is deep fried, cooked with spices and simmered. Serve with roti or naan.
