Vegetable Korma Recipe

Ingredients:

For Masala Paste:

  • Desiccated coconut 5 tbsp
  • Cashew nut blanched 12
  • Poppy seeds 2 tsp
  • Roasted chana daal 1/2 tbsp
  • Fennel seeds 1 tsp
  • Cumin seeds 1/2 tsp
  • Cloves 3
  • Green cardamoms 2
  • Black cardamoms 4-5
  • Green chilies chopped 2
  • Garlic chopped 3
  • Ginger chopped 3/4 inch

For Korma:

  • Cauliflower 1
  • Potato diced 1
  • Green peas 1/2 cup
  • French beans chopped 7-8
  • Carrot chopped 1
  • Oil 2 tbsp
  • Onion finely chopped 1
  • Tomato chopped 1
  • Curry leaves 7-8
  • Turmeric powder 1/4 tsp
  • Red chili powder 1/2 tsp
  • Salt as required
  • Coriander leaves 2 tbsp

Method:

  1. Soak cashew nuts in hot water for 30 minutes, drain and keep it aside.
  2. Grind all ingredients of masala paste with little water till smooth and keep it aside.
  3. Heat oil, add onions and saute until light brown.
  4. Add curry leaves and stir.
  5. Then add tomatoes, turmeric powder and red chili powder.
  6. Add ground paste, stir and mix it nicely.
  7. Add yogurt, vegetables, water and salt and cook it.
  8. Garnish with coriander leaves and serve.

Vegetable Korma is tasty dish. Mixed vegetables are used to prepare this dish. Serve with roti.
