Puffed potatoes

Ingredients:

  • Eggs – 3
  • Mashed potatoes – cups
  • Sour cream - 1/2 cup
  • Parmesan cheese - 1/2 cup
  • Salt - 1/4 tsp
  • Pepper - 1/4 tsp.
  • Basil leaves – 1 tbsp

Method:

  1. Pre-heat oven to 350 degrees F.
  2. In a bowl, beat egg whites.
  3. In another bowl, beat egg yolks until smooth and add mashed potatoes.
  4. Mix in sour cream, cheese, salt, white pepper, and basil, then fold in the beaten egg whites.
  5. Pour into a dish and bake at 35

A great alternate for pasta as a side dish
