Brinjal( Baigan ) Recipes
Brinjal (Baigan) that is known as an egg plant is a vegetable which is very low in calories but healthy nutrition profile. In western world it is popularly known as aubergine. Several varieties are grown in different parts of the world in different shapes, sizes and colours. The variation depends on the cultivar type, but they are widely available in two broad categories, either in oval shape or thin elongated shape. It has smooth and glossy skin exterior while interior is off white colour pulp with numerous tiny soft seeds, centrally arranged.
