Paneer Karahi And Chana Pulao by Sara Riaz

Ingredients for Chana Pulao:

  • Rice 1/2 kg
  • Chanay 1/2 kg
  • Turmeric 1/2 tsp
  • Salt to taste
  • Red chilli 1-1/2 tsp
  • Whole garam masala 1 tbsp
  • Ginger 1 inch piece
  • Salt to taste
  • Fennel seed 1 tsp
  • Onion seed 3/4 tsp
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Green chilli 4-5
  • Onion 1
  • Coriander leaves as required

Method:

  1. Put 1 tsp soda in chanay, soak over night, wash in morning and boil it.
  2. Heat oil and fry onion. Then add whole garam masala, fennel seed, onion seed, ginger garlic paste, red chilli & turmeric and roast it.
  3. When roasted, add chanay & water and boil it.
  4. When boil, add salt & soaked rice and cook it.
  5. Lastly, add coriander leaves and green chillies.
  6. Serve with raita.

Ingredients for Paneer Karahi:

  • Paneer 2 packet
  • Capsicum 2
  • Tomato 6
  • Onion 2
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Salt to taste
  • Turmeric 1/2 tsp
  • Crushed black pepper 1 tsp
  • Crushed red chilli 1 tsp
  • Roasted & chopped cumin 1 tbsp
  • Fenugreek seed 1 tsp
  • Garam masala 1 tsp
  • Ginger 1 inch piece
  • Green chilli as required
  • Coriander leaves as required
  • Naan 4

Method:

  1. Heat oil and fry onion. Then add tomato, ginger, garlic, salt, red chilli & turmeric and roast it nicely.
  2. Cut paneer into pieces, fry it and add in masala.
  3. Now add capsicum, onion, green chilli, fenugreek leaves, cumin & garam masala and simmer it.
  4. Lastly, add coriander leaves, green chilli and chopped garlic.
  5. Paneer karahi is ready.
