Ingredients for Methi Chicken Corn:

  • Chicken 16 pieces
  • Onion 1
  • Tomato 4
  • Yogurt 1 cup
  • Garam masala 1 tsp
  • Turmeric 1 tsp
  • Ginger 1 tbsp
  • Garlic 1 tbsp
  • Red chilli 1 tbsp
  • Salt 2 tsp
  • Coriander leaves as required
  • Cream 1/2 packet
  • Small methi 4 bunch
  • Sweet corn 1 tin

Method:

  1. Marinate chicken with yogurt, half salt, red chilli, turmeric, ginger, garlic and garam masala and leave for few minutes.
  2. Heat oil and add onion and remaining half masala.
  3. Then add methi and tomato and roast it.
  4. Now add marinate chicken and cover it.
  5. When chicken is tendered, mix cream and corn and leave for simmer.
  6. Add coriander leaves and green chillies. Serve with sheermal.

Ingredients for Mughlai Kofta:

  • Chicken mince 1/2 kg
  • Red chilli 1 tsp
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Cumin 1 tsp
  • Coconut 1 tbsp
  • Poppy seeds 1 tbsp
  • Garam masala 1/2 tsp
  • Nutmeg, mace 1/2 tsp
  • Green cardamom 1/2 tsp
  • Fried onion 2 tbsp
  • Boiled chickpeas 2 tbsp
  • Salt to taste
  • Almonds 8
  • Onion 1

For Gravy:

  • Yogurt 1 cup
  • Fried onion 1/2 cup
  • Ginger 1 tsp
  • Garlic 1 tsp
  • Red chilli 1 tbsp
  • Coriander 1 tbsp
  • Whole mix spice 1 tbsp
  • Coriander leaves as required
  • Salt to taste

Method:

  1. Roast chickpeas, coconut, poppy seeds and almonds and grind thin.
  2. Add fried onion, roasted garam masala, salt, garam masala, fried onion, red chilli, ginger, garlic, cumin, nutmeg, mace and green coriander in chicken and grind in chopper.
  3. Now make koftay of this mixture.
  4. For masala: Heat oil, add whole mix spice, ginger, garlic, fried onion, salt, red chilli, coriander and yogurt and roast it.
  5. Lastly, add koftay and leave for simmer.
  6. When ready, serve hot.
