Chilli corn carne

Ingredients:

  • Oil                                   2tbsp
  • Onion                               1
  • Red capsicum                 1
  • Garlic                              2tbsp
  • Crushed red chilli    1-1/2 tsp
  • Paprika powder           1/2 tsp
  • Beef mince                     500mg
  • Tomato                             4
  • Beef stock cube               1
  • Tomato paste                  2 tsp
  • Red bean                       1 cup
  • Green capsicum             2
  • Sugar                              1 tsp
  • Salt                               to taste
  • Black pepper pwd      1/2 tsp
  • Crushed cumin              1 tsp
  • Marjoram                        1 tsp

Method;

  1. Cut capsicum in cubes and chop onion .
  2. Heat oil in a pan , fry onion till golden brown and then fry garlic.
  3. Add paprika powder and cumin powder ,  mix well.
  4. Add beef mince and cook on high flame, when it changes color add beef stock and        1 -1/2 glass water. Bring it to a boil.
  5. Add tomatoes , tomato paste, marjoram and sugar. Cover and cook for 20 mins.
  6. When the beef mince is done then add boiled beans and cook for 10 mins.
  7. If it gets too dry then add some more water and cook for 10 mins more , balance the seasoning.
  8. Leave it on steam for 5 mins .
  9. Serve with boiled rice.

Primevera potato salad

Ingredients:

  • Potato                      4
  • Green beans        1 cup
  • Carrot                     02
  • Spring onions        02
  • Oil                          1/2cup
  • Vinegar                  3tbsp
  • Crushed garlic        1tsp
  • Honey                       1tsp
  • Mustard paste         1tsp
  • Thyme                    1/2tsp
  • Salt                          1/4tsp
  • White pepper        1/4tsp

Method;

  1. Boil potatoes in salted water for 10 mins.
  2. Add carrots and green beans and boil them for 5 mins.
  3. In a mixing bowl , add all the other ingredients and make a dressing.
  4. Cut potatoes in halves.
  5. In a bowl , put all three veggies and then add the dressing and serve.
