Achari Mooli Paratha, Chicken Tikka Masala And Tinday Aur Anday Ki Gravy by Rida Aftab

Ingredients for Achari Mooli Paratha:

  • 1 packet magi umda paratha
  • White radish 2 cups
  • 1/2 tsp green chillies
  • 1/4 tsp red chilli
  • Salt as required

For Paratha:

  • 2 cups flour
  • 4 cups oil
  • Water as required

Method:

  1. In on bowl, mix magi umda paratha, white radish, finely chopped green chillies, crushed red chillies and salt.
  2. Now knead flour, make 2 portions and roll it.
  3. Spread slightly oil on one roti and spread magi achari moli paste. Then keep second roti and seal corners.
  4. Now put on hot tawa, fry it and serve hot.

Ingredients for Chicken Tikka Masala:

  • 1/2 kg chicken boneless
  • 1 tsp cumin
  • 2 tsp garlic paste
  • 1 piece of cinnamon
  • 4 cardamoms
  • 2 chopped onion
  • 1 tsp red chilli powder
  • 50 grams butter
  • 10 whole red chillies
  • 2 tbsp tamarind paste
  • 2 chopped tomatoes
  • 1/2 tsp coriander powder
  • Oil as required

Method:

  1. Heat oil and fry onion until brown.
  2. Now put garlic paste, finely chopped tomatoes, coriander powder, tamarind paste, cumin and cardamoms and roast it.
  3. Then add chicken pieces, cover it and cook for 20 minutes.
  4. Then fry whole red chillies in butter, put in chicken and clove the stove.

Ingredients for Tinday Aur Anday Ki Gravy:

  • 1/2 kg apple gourd
  • 4 boiled eggs
  • 2 onions
  • 250 grams tomatoes
  • 6 whole red chillies
  • 1 piece of ginger
  • 4 garlic
  • 2 tsp cumin
  • 1 tsp whole black pepper
  • 1 tsp salt
  • 1/2 cup oil
  • Green chillies, coriander for garnishing
  • 1/2 tsp turmeric
