Kolmi Bahth And Fried Sesame Seed Chutney by Chef Mehboob

Ingredients for Kolmi Bahth:

  • Basmati rice 1 cup
  • Green chilli 4
  • Prawns 1/2 kg
  • Sesame seed 2 tsp
  • Coriander dry 1 tsp
  • Clove as required
  • Salt to taste
  • Oil 2 tbsp
  • Coriander 1/2 cup
  • Coconut dry 3 tsp
  • Curry leaf 10
  • Mustard seed 1 tsp
  • Asafetida 1/2 pinch
  • Water 1/2 liter

For Marination:

  • Turmeric 1 tsp
  • Chilli powder 1 tsp
  • Lemon juice 2 tbsp
  • Salt to taste
  • Bay leaf 2
  • Cumin seed 1-1/2 tsp

Method:

  1. Wash prawns nicely. Then add turmeric, chilli powder, lemon juice, and salt and marinate it.
  2. Wash rice and soak in water for 20 to 25 minutes.
  3. In one frying pan, roast coriander, cumin seed, sesame seed, bay leaf and dry coconut.
  4. In one pan, heat oil and put mustard seed and curry leave.
  5. When mustard seed starts cooking, then add asafetida, finely chopped green chillies, all masalay and marinated prawns, stir continuously and fry for 2 minutes.
  6. Then put water and cook until boil comes.
  7. Now add rice and cook on high flame.
  8. When water dries, low the flame, cover it and cook it.
  9. When ready, serve it.

Ingredients for Fried Sesame Seed Chutney:

  • Sesame seed 3/4 cup
  • Salt 1 tsp
  • Water 2/3 cup
  • Green chilli 3
  • Coriander 4 tbsp
  • Mint 1 tbsp
  • Tamarind paste 1 tbsp
  • Sugar 2 tbsp
  • Oil 1 tsp
  • Onion seed 1/2 tsp
  • Curry leave 4
