Ingredients for Chicken Sajji:

  • Chicken with skin 1
  • Oil 3-4 tbsp
  • Garlic 1
  • Salt 1 tsp
  • Lemon juice 2 tbsp
  • Vinegar 2 tbsp
  • Butter 1/2 cup

For Sajji Masala:

  • Fennel seeds 1 tsp
  • Black cumin 1 tsp
  • Cinnamon 1/2 tsp
  • Black salt 1/2 tsp
  • Salt to taste
  • Small cardamom 4-5
  • Khatai powder 1 tbsp

Method:

  • Prick chicken nicely. Then marinate with garlic, salt, oil, vinegar and lemon juice and leave over night.
  • Bake on slow oven for 2 to 2-1/2 hours.
  • When chicken tender, spread butter and sprinkle sajji masala.
  • Again keep in oven for few minutes.
  • Serve with yellow rice.

Ingredients for Arvi Ki Bhujia Masala Wali:

  • Colocasia 1 kg
  • Garlic 3-4 clove
  • Crushed red chilli 1 tsp
  • Red chilli powder 1/2 tsp
  • Green chilli 3-4
  • Turmeric powder 1/2 tsp
  • Carom seeds 1 tsp
  • Whole red chilli 4-5
  • Oil 1/2 cup
  • Tomato 2
  • Tamarind pulp 2 tbsp

Method:

  1. Peel colocasia and cut round.
  2. Grind garlic, tomato and crushed red chilli.
  3. Heat oil and fry whole red chilli. Then add chopped tomato, salt, chilies, turmeric and green chillies and roast masala.
  4. In end, put colocasia and carom seeds and keep on simmer.
  5. When tender, add tamarind pulp and serve.
