Masala Fries, Gur Imli Ki Chutney And Green Raita by Chef Arif Dawood

Ingredients for Masala Fries:

  • Potato 1 kg
  • Cumin 1 tsp
  • Chaat masala 1 tsp
  • Garlic powder 1 tsp
  • Corn flour 1 tbsp
  • Red chilli powder 1 tbsp
  • Rice flour 2 tbsp
  • Baisan 6 tbsp
  • Yellow color 1 pinch
  • Mayonnaise 1 bowl

Method:

  1. Mix garlic powder in mayonnaise nicely.
  2. Garlic mayo sauce is ready.
  3. Cut potato into french fries shape.
  4. Now put baisan, rice flour, corn flour, red chilli powder, cumin and chaat masala, mix it nicely and fry in hot oil.
  5. In end, put garlic mayo sauce.
  6. Masala fries is ready.

Ingredients for Gur Imli Ki Chutney:

  • Jaggery 250 gm
  • Tamarind pulp 250 gm
  • Dry ginger powder 1 tsp
  • Crushed red chilli 1 tbsp
  • Cumin 1 tbsp
  • White sesame 1 tbsp
  • Red color 1 pinch

Method:

  1. Mash jaggery and soak in water.
  2. In one pan, put jaggery, tamarind pulp, crushed red chilli, dry ginger powder, roasted cumin and water and cook it.
  3. When thick, add red color and sesame.
  4. When cool, fill in air tight container.

Ingredients for Green Raita:

  • Yogurt 250 gm
  • Garlic 10-12
  • Cumin 1 tbsp
  • Coriander 1 bunch
  • Mint 1 bunch
  • White drink 1 bottle
  • Ginger 1
  • Salt to taste

Method:

  1. Grind coriander, mint, ginger, garlic, cumin and salt in blender.
  2. Now add yogurt and mix it nicely.
  3. In end, add white drink and serve.
