Ingredients for Roasted Tomato Cholay & Egg Salad:

  • 10 (quartered and no sted with salt n pepper)
  • Boiled chickpeas 1/2 kg
  • Boiled eggs 4 quartered

For Salad Dressing:

  • Chopped Onions 1/4 cup
  • Fresh Coriander 1/4 cup
  • Lemon Juice 2 lemons
  • Mustard Paste 2 tbsp
  • Honey 2 tbsp
  • Olive oil 2 tbsp
  • Salt n pepper as needed

Method:

  1. Mix dressing ingredients well.
  2. On a large platter arranged salad ingredients, pour dressing over and serve.

Ingredients for Chuqandar Humus:

  • Boiled Chickpeas 2 cups
  • Boiled Beet Roots 1 cup
  • Garlic 2 cloves
  • Tahini paste 2 tbsp
  • Lemon Juice 1 tbsp
  • Salt as needed
  • Olive oil 3 tbsp
  • Cumin powder 1 tsp
  • Red Chili paste 1 tsp
  • Pita Bread to serve
  • Fresh Coriander 1 tbsp

Method:

  1. Combine chickpeas, tahini paste beets, garlic, half of cumin powder and salt into a fine paste.
  2. Garnish with cumin powder, red chili paste combine with olive oil, sprinkle parsley and serve with bread.
